Recipe of the Week
Crab Stuffed Flounder

Ingredients:
6 fillets of flounder
2 green onions, minced
1 stalk celery, minced
½ pound crabmeat
½ stick butter
½  c. bread crumbs 
½  tbsp. snipped parsley 
Salt, pepper, paprika
 
Directions:
Cut fillets in half lengthwise, wrap each half into a circle and place in a well buttered, glass baking dish. Set aside. Sauté onion and celery in butter for 2 minutes. Add bread crumbs, parsley, toss gently to mix well. Spoon into center of flounder, garnish parsley. Season with salt, pepper, and parsley to taste. Dot with butter. Bake at 350 degrees for 30 minutes

Taking Care of the Trout
 
This past week The South Carolina Department of Natural Resources sent out a public service announcement asking anglers to voluntarily release trout for this spring and summer.  This announcement, in contrast to recent bottom fishing closures that have been imposed on anglers without good science, was made after 9 trammel net surveys were conducted in different estuaries.  The number and size of fish is alarmingly low.  I have spoken with many anglers in the past 3 weeks and to a person they are all willing not only to release their trout, but to make sure they tell everyone they know as well.  This makes me proud to be an angler and a sportsman.  I’ve seen a change in the mindset of anglers over the last 20-30 years.  We have come to realize our impact on the fishery and have become much more conservation minded than we were in years past.  In the past when you heard someone giving a presentation on fishing they always told you how and where to catch fish.  These days if you go to a fishing seminar not only do you hear about how to catch fish, but you are likely to hear something about how to properly release a fish and not keeping more than you need.  Hopefully this voluntary closure will allow us all to benefit with a strong thriving trout fishery for generations to come.  Here is a link to the SCDNR press release for anyone that may have missed it.  http://www.dnr.sc.gov/news/yr2011/april28/april28_trout.html

South Carolina Governor’s Cup Billfishing Series Ready to Roll at Bohicket Marina Invitational Billfish Tournament
 
CHARLESTON, SC - Last year was an exciting one at the Bohicket Marina Invitational Billfish Tournament as Blue Sky out of Georgetown, owned by Greg Smith of Pawleys Island, brought in a 515 pound Blue Marlin on the final day of the tournament.  This was the first blue marlin brought to the docks in a Governor’s Cup event since 2007.  That fish was worth quite a bit of money, but so were a couple of releases.  Game On, owned by Sea Hunt Boats of Lexington, still took first place in the tournament with release points for a Blue Marlin and a Sailfish.  “That marlin on the dock, and the excitement it created, along with the excitement of releases still in the lead brought more spectators out to the docks of Bohicket Marina than any other time I’ve seen”, says Tournament Director, Deidre Menefee.
 
Billed as South Carolina’s fishing tradition and part of the original “Triple Crown”, the Bohicket Invitational Billfish Tournament is again, the FIRST leg of the South Carolina Governor’s Cup Billfishing Series.  The event is scheduled for May 11 - 14, 2011, fishing two out of three days.  
 
With one of the most beautiful backgrounds in the Lowcountry, the Bohicket Marina & Market will celebrate with live music each night of the tournament.  Red’s Ice House did not disappoint last year as they were celebrating their opening at Bohicket Marina & Market and they'll do the same this year serving up great food, drink, and entertainment during the tournament.   
 
The tournament awards Top Boats and Anglers for Billfish Categories, Dolphin, Tuna, and Wahoo, as well as Top Youth Anglers and Top Lady Anglers.  Since this is the first tournament in the Governor’s Cup Series, boats will be vying to get in the lead and stay in the lead for such awards as Outstanding Billfish Conservationist, Outstanding Billfish, Top Female Angler, and Top Youth Angler of the Year.

The Final Word
Fishing reports from this past week were thick.  Nice weather this past weekend allowed many boats to get offshore and there were plenty of fish caught.  Blackfin tuna, wahoo and plenty of dolphin were reported.  There were also a few blue and white marlin caught as well.  Looking for rips and temperature breaks worked well for everyone.  This is a great start to our offshore  season.  Nearshore the reefs are producing plenty of sheepshead and black sea bass.  There have also been a few cobia caught around the reefs and buoys as well.  Inshore the Spanish mackerel are around the jetties along with some nice size bluefish.  King mackerel fishing should begin to pick up this month as the bait gets thicker. Redfish have been very good around docks and in the creeks.  The huge schools have broken up as the water temperatures rise, but you can still find some nice pods of fish on the flats.  Sheepshead fishing is good inshore and around the jetties as well and the flounder fishing is really turning on around the inlets and jetties.  Cobia fishing is also going very well to the south in the Beaufort area.  May is a great month to fish both inshore and offshore so get out and take advantage of the nice days before the dog days of summer hit us.  We also thank everyone that sends in their reports and participates in the site each and every day.
